Ingrediets 

  • 50 gr harissa (see the product)
  • 700 gr medium wheat semolina
  • 750 gr real beef
  • 2 carrots
  • 2 courgettes
  • 2 white onions
  • 50 g olive oil
  • 50 g tomato paste
  • 1 teaspoon saffron
  • 1 teaspoon white pepper
  • 1 teaspoon of caraway seeds
  • 1 bunch of coriander
  • coarse salt

Recipe 

In the lower part of the bromine (or in a high-temperature saucepan), heat the oil and fry for several minutes, cut the meat into pieces, and onion in strips.

Add tomato paste,Harissa, pepper and 1/2 tablespoon of coarse salt. Pour water up to half the height of the pan and bring to a boil.

Leave to simmer for about an hour.

Meanwhile, cook the vegetables: peel the carrots, zucchini and cut them into small pieces. Put the couscous groats on top of the bromine pan and cook according to the basic recipe. Once the meat is ready, add the carrots. After 10 minutes add zucchini and cook another 10-15 minutes. Adjust the taste, add salt and add your favorite flavors. Lay out couscous on one side of the plate, vegetables on the other, and put pieces of meat on top. Pour the remaining broth a little.
